We love almond croissants so much, we had to make one into a cookie. Then we added creamy Ghirardelli white chocolate chunks — because of course we did. Each cookie is stuffed with scratch-made almond paste, baked in a light, magical dough, topped with sliced almonds, and finished with a happy dusting of powdered sugar.

Delicate yet decadent, it’s a French-inspired treat that pairs perfectly with coffee or tea — and yes, the French would be proud.
